The Einkorn of It All

Nutrition is a key part of holistic healing. I’d like to share with you one change our family made that has made a significant difference. Most families consume a significant amount of baked goods, but those products have been highly processed and have lost all nutritional value save the calories of the starches. This is the reasons that grain products are fortified with added nutrients from highly processed and stabilized sources. When my family made the change to grinding our own grain and baking our own home goods, it gave us the most delicious smelling, fabulous tasting and nutritious baked goods we could imagine. Yes, we did initially make the change because of gluten intolerance issues that run throughout my family members, but once we experienced the Einkorn difference, we were sold.

What is Einkorn you ask, well, let me try and explain. Einkorn is the most ancient form of wheat known to mankind. It has far less gluten than modern wheat grains and even the gluten that it does have is a different composition than that of modern wheat grains. This gluten does not upset the GI tract as does the modern gain. And because it has far less gluten content it can be easily digested and being easier to digest makes the nutrients more readily available to be absorbed.

Since grains begin to oxidize once the outer shell of the seed is penetrated, any milled grain begins to degrade immediately. Baking the product is what stabilizes it temporarily. These baked goods are packed full of protein, essential fatty acids, phosphorus, potassium, pyridoxine (B6), lutein, beta-carotene and carotenoids which helps prevent disease. The milled gains that you purchase in the stores have been ground for long enough to eliminate their nutritional value, but that which is ground for immediate use can have the nutritional value lock in place for a short while – until consumed or discarded.

However, I’ll give you some insight that I wish I had when we started because we purchased a grain grinder that was inferior and did not grind the grain fine enough for our baking needs. So do your research on all accounts and make sure your purchase is solid. Because a quality grinder is required to make quality baked goods (full, fluffy, and moist). I have certainly proven that to be true. So if you should need some quality options, let me know. I can certainly tell you what machine I initially purchased that was inferior and what machine I landed on after I did proper research. The initial purchase was a full stainless steel KitchenAid gain grinding attachment ($150). Again, I do not suggest it. The unit I ended up selecting for my family that was properly vetted is the KoMo Mio Grian Mill ($320). It is a smaller version of the stone ground mills that have become so popular. There are a plethora of choice options that are just as good. There are many that cost more and produce more. It truly depends upon what your family or business needs and what you can afford to spend. I chose the middle-low ground of fine grain milling vs product cost. There are also Cadillac versions that cost upwards of $3,000.00, but, spoiler, they still just grind grain. If you can afford to spend the few extra dollars, the Nutrimill Harvest ($450) is a popular option and the KoMo Fidibus ($450) is also top notch. Any of these you should choose will serve you well and will kick-start your journey toward healthy baked goods that bring healing instead of destruction.
